Instructions
  1. Heat olive oil in a large pot on med-high heat.
  2. Stir in onion, carrot and celery, 1/2 teaspoon pepper. Cook 3-5 minutes or until onions are translucent.
  3. Add in garlic, bell pepper and 1/4 teaspoon pepper. Cook for 1 minute.
  4. Add in green beans and cook for another minute.
  5. Stir in diced tomatoes, vegetable stock and remaining spices.
  6. Bring to a boil and then let simmer, uncovered over med-low heat for 25 minutes.
  7. Add in kale, reduce to simmer an additional 20 minutes.
  8. Top with fresh parsley.
Recipe Notes

Will keep for a week in refrigerator and freezes well for several months.
