- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1 cup skim or 2% milk
- 3 large eggs
- 6 tablespoons shortening divided
- butter

Instructions
- Preheat oven to 375 degrees.
- Combine flour and salt in medium-size bowl. Stir in milk. Beat in eggs until batter is completely blended. Place 1 1/2 teaspoons shortening in bottom of each of 12 custard cups or large muffins tins. Place in oven and heat until shortening is melted and cups are hot. Fill each cup 2/3 full with batter.
- Bake at 375 degrees for 45 minutes. Do not open oven door while popovers are baking. To do so will prevent them from "popping".
- Serve hot with butter.
